Serious Seltzer: Mimosa
Seltzer is super serious everyone, we're not even joking. It’s like, not even a laughing matter, so don’t laugh. We’re so serious about it that we fermented a super legit seltzer in freshly emptied wine barrels from Willamette Valley, adding in our mixed culture of wild yeast and lactic acid bacteria. We even propagated that culture in apple juice a few times first to remove any residual gluten, cause we’re serious about this. Then we added a seriously large amount of cara cara and blood orange puree to juice it the heck up. And then we thought “Ya know what? Let's can condition it for extra seriousness. We're adults. We can have cookies for dinner and can condition our seltzer if we want to!” And so here we are. The result is a flavorful, lightly tart and funky seltzer that finishes super crisp and is as refreshing as any other seltzer out there. BUT SERIOUS.
